Livestock
for the butcher's department of the shop, which is the core
business, is sourced directly from the founder members' farms.
The majority of which are within the Ainsty district, part
of the Vale of York.
Animal
Welfare and Conservation are two issues that both Sam and
Stuart feel very passionately about. They go to great efforts
to ensure that only the highest quality animals are selected,
from producers who they know to farm using these methods.
Traceability
All animals are transported by the farmer, to the nearest
family run abattoir. This reduces the food miles and unnecessary
stress to the animals. All meat is then delivered to the shop's
own cold store where it is "hung" and matured to
give maximum flavour and texture before being butchered on
the shop premises. All sausages, burgers etc. are made by
hand on our premises by ourselves.
Full
traceability is therefore guaranteed throughout the food chain.
